We wanted to make sure that we use every last drop of the scrumptious Scottish honeycomb we make so we've packed as much as we can into these stunning honeycomb bars! 


Batch No. 4 - Maldon House Apiaries Blossom Honey

Our fourth Scottish honey producer is a honey that I have been using in my chocolates for the last year. I love this versatile blossom honey and often pop it into ganaches or caramels wherever I can. Maldon House Apiaries located in Gilmerton, Perthshire. The Apiary was establised in 2017 and beekeeper Leila started off with just one wee hive in her garden. As the passion and curiosity grew, so did her bee population. From Leila:

"We started beekeeping in the spring of 2017 which started off with a beginners course at my local association, which really was the beginning of what is now a  fascination and huge admiration for the little beasties.  They really are remarkable creatures.  We got our first colony of bees that spring and they lived happily in our garden for a few years during which time they were joined by others including a swarm that happened to land in our garden that very first summer.  We still have the offspring of both of those colonies although they are no longer in our garden.  We now have between 11 and 20 colonies at different times of the year and we have built a new apiary to give them plenty of space to forage and to keep them distanced from the public as we are aware that not everyone is as keen on  honeybees as we are.  This year we have an exciting winter planned as we are doing some additional work on our apiary with new fencing going in as well as setting up another apiary (or two!) in a totally different location.  This will enable the production of honey from bees on different forage which is ultimately reflected in the flavour as well as providing us with some protection should any of our apiary sites be negatively affected in any way, be that inclement weather, poor foraging or even disease."



Honeycomb - 

Dark chocolate (70% cocoa minimum, pure cocoa butter ), Milk Chocolate (40% cocoa butter minimum, pure cocoa butter) Glucose syrup, honey, caster sugar, bicarbonate of soda and salt.

This product is made in a kitchen that handles nuts, peanuts, gluten, soya and dairy and may contain traces of all of the above.

Suitable for vegetarians and coeliacs.
